peanut brinjal

Hello Friends, 

Brinjal are as common as other vegetables in our cooking book, I thought to give twist and make them more interesting so that we have a new recipe in our cook book. 

Here want to share with you recipe of Peanut stuffed Brinjal. 

Ingredients:-

250 Gram small or baby brinjal
1 Cup Peanut
1/2 Cup Coconut
3 Onions
2 Table spoon white til
3 - 4 Lal sukhi Mirch
1 Table Spoon Jira Powder
Salt as per taste
1 Table Spoon Coriander Powder
1 Table Spoon Red Chilli Powder
1 Table Spoon Amchur
3-4 Table Spoon Oil

Method:-

First slit brinjals from 4 sides and dip in water and put a pinch of salt and keep aside. 

Now take a pan and Peanut, onions, coconut, white til, lal sukhi mirch and roast it nicely and once it will get roast then take a grinder mixture and grind this mixture with putting little bit of water. 

Once the paste is ready put it in a bowl and add salt, jira powder, red chilli powder, coriander powder, amchur powder and mix it well in the paste. Now the stuffing is ready to be filled in brinjals. 

Now fill this stuffing in slitted brinjals, whatever paste will left keep them aside to use it as gravy.

Once the brinjal stuffed then take a pan and put the oil and add the stuffed brinjals in the pan
alongwith remaining paste. Add little bit of water and cover the pan with lit for 10 minutes. After 10 minutes when you find that the brinjals are tender means soft enough to serve then you can off the flame. 

Serve them in a bowl and garnish with with coriander leaves and crushed coconut.
